Cooking in the Cava: Today we have prepared a Penedès Rooster with Cava!

Preparation time: 180 minutes + 48h maceration
Ingredients: 1 Rooster + Salt + Oregano + Oil + Black Pepper + Potatoes + Duck Fat + Cava
1) Prepare the mixture in a bowl: Salt, Oregano, Black Pepper and Duck fat.
2) Massage the entire Rooster with the mixture. You can now do this in a tray or pot that can go in the oven and can be covered. Let it marinate for 48 hours.
3) Take the Rooster out 1 hour before cooking and preheat the oven to 200ºC.
4) Put the bottle into the Rooster so that the neck of the bottle comes out through the neck of the Rooster. And put it in the oven vertically, if you can watch the video it will help you. The estimated time will be about 3 hours.
5) Put a bit of Cava at the bottom of the pan, it will help the Cava in the bottle to boil. Also, if you hit the neck of the bottle a few times, it will help it overflow more and cover the whole Rooster with Cava.
6) Prepare the potatoes. 5 minutes in the microwave on each side and simply mash them so they break. Add them to the oven tray/pot when there is 1 hour left to finish.
7) When we think it is cooked inside, take the Gallo out of the bottle and place it on the pot/tray. Sear it at a higher temperature on each side for a few minutes so that it turns golden. If there is Cava left in the bottle, pour it on top.
It is now ready to serve, enjoy!!
